This Season Monkfish is all the rage. And this Monkfish and chorizo dish is the perfect way to Delph into this seasons produce and can be prepared in just 15 minutes.
What you will need:
- 1 monk fish tail, about 700g prepared
- 1 chorizo ring in 1cm slices
- 2 tbsp. chopped rosemary
- 1 tbsp. butter
- 2 tbsp. seasoned flour
Cut fish into small chunks and toss in the seasoned flour with half of the rosemary
Dry fry chorizo then drain on a paper towel to degrease
Heat the butter and fry the monkfish for about a minute on each side
Return the chorizo to the pan and sprinkle with the remailing rosemary and enjoy!
Add desired veg or serve with creamy mash to bulk up a meal
