This meal prep recipe adds a succulent and flavoursome Italian twist to the standard chicken and veg.
So, what will you need:
2 medium chicken breasts 1 head of broccoli
1 red onion
1 cup plum tomatoes
2 cloves garlic, minced
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
How to do it:
- Chop chicken and vegetables into chunks using our Forever sharp knives.
- Preheat oven to 450f and line a baking tray with tin foil
- Place chicken and vegetables on the baking tray and sprinkle with the garlic, salt, pepper, seasoning, Italian spices and drizzle with olive oil
- Bake in the oven for 15-20 minutes, until both chicken and vegetables are tender and charred.
Add an optional cup of rice to 4 separate meal prep containers and place chicken and vegetable mix on top and store in a fridge for up to 5 days or freeze for up to 5 months.
